Buckwheat is a grain rich in protein, B vitamins and minerals such as magnesium, manganese, copper, phosphorus, zinc, potassium, iron and selenium. Contains oleic acid and polyunsaturated acids.
It does not contain gluten, perfect for diets suitable for celiacs. Its fat content is usually less than 1.7%. It has great antioxidant power thanks to its rutin content, which helps regulate cholesterol and prevent high blood pressure.
There is evidence of its appearance in the Neolithic in the European area, but its domestication as food occurred in China around 2,600 BC.
