What exactly is an ecological certification?

Ecological certification is the process in which the producers of food, inputs, and processed or processed products, obtain permission to use the “ecological” rating, always under the development of inspections, controls, audits and desk review. The production and market of ecological foods in Spain

Did you know that the jungle can provide us with much more than the wood from its trees? The Amazon rainforest has a great diversity of resources that are interesting in economic terms as well as in terms of rural development and environmental protection.

The depth of the Amazon rainforest is an ecosystem that contains a spectacular diversity of fauna and flora. This ecosystem thus contains many plant species that are interesting resources to be incorporated into the food or cosmetics market.

Non-timber Forest Products (Nwfps) is the name by which FAO refers to goods of biological origin, other than wood, derived from forest, other forest areas and trees outside forests. With the evolution we are witnessing on the importance of rural development and on poverty alleviation, there has been growing interest in studying how forests and forest products contribute to food security and livelihoods of households in entire communities residing in what are known as developing countries.

At the same time, concern that development activities be consistent with environmental integrity, and without prejudice to the future potential of forests and land and resources, have highlighted arguments that their management of Ntfps could be less harmful to the environment than alternative uses of forests.

The study of these forest products that are different from wood are also important for achieving conservation of the native biodiversity of the Amazon.

According to the European Commission, organic farming is an agricultural system whose ultimate aim is to provide consumers with fresh, tasty and authentic food, while respecting natural life-cycle systems.

What is organic food production?

Conceptually, organic agriculture and livestock farming is defined as a summary of agricultural techniques that generally exclude artificial synthetic chemicals, which preserve the environment, try to maintain the fertility of the fields and provide us with quality food.

According to the Ministry of Agriculture, Food and the Environment; organic production in Spain has experienced an important boom since its beginnings in the 1980s and also ranks among the first in the world in terms of cultivated area dedicated to this sector.

If we refer to the world market, the intensity with which organic production is developed is also relevant, since in 2010 there were 160 countries with organic production in the world; as well as the continued growth in consumption of organic products, which in 2010 was over EUR 44.5 billion.

Q’omer®, was created last November 2013 and began its activities in January 2014. It was born as a social enterprise where the commitment to the native communities that supply raw materials is an axis of the work itself.

Being part of this Biotrade network at an international level is an achievement but also a challenge for Q’omer®, as acknowledged by Juan David Escobar, founding partner:

Do we dare to introduce new foods into celiac diets? Discover what the Andes offer us.

At Q’omer® we are fortunate to know these crops, Andean cereals, which now present a wide range of possibilities to be introduced in our diet as a cereal, and in special diets such as celiac.

We are talking, of course, about quinoa and amaranth; two pseudo-cereals that grow in Latin America. Quinoa has been growing in the heart of the Andean mountains for thousands of years in the territory now known as Peru and Bolivia. It is also currently cultivated in Ecuador, Colombia, Argentina and Chile. Amaranto, for its part, benefits from this peculiar ecosystem and also grows in Peru and Bolivia, Colombia, Ecuador and Argentina.

The introduction of these cereals in a gluten-free diet for people suffering from celiac disease is one of their most interesting applications, which gives them a little diversity in their diet, sometimes very limited, and allows them to benefit from their nutritional properties.

Celiac disease is a syndrome related to dietary intolerance to gluten, consisting of certain vegetable proteins found in wheat, barley, rye and other cereals. Camu camu: Amazonian fruit rich in Vitamica C and antioxidants

Discover Camu camu, an exotic food with many functional properties and surprising vitamin C content

Of all the resources that the Amazon region offers us, in Q’omer® we want to highlight the characteristics and functional properties of the Camu Camu, a shrub that grows in flooded soils of the humid regions of the forest, having its highest concentration in the Peruvian Amazon.

The Camu camu shrub produces orange-red berries about the size of a lime. This product is gaining popularity in the market of food supplements the more information is collected and the more it is influenced in the investigation of the biological properties of its phytochemical profile. The Amazon carries more water than the Mississippi, Nile and Yangtze rivers combined. Its drainage area or basin is also the largest in the world. The Amazon is responsible for one-fifth of all freshwater incorporated into the Earth’s oceans. Such is the force with which the river discharges its waters to the Atlantic Ocean, being able to find fresh water at a distance where the coast is no longer visible.

In most of the lowlands of the Amazon basin, forests remain flooded half the year. These floods are fundamental to the ecology of Amazonian ecosystems, as they increase the amount of habitat available for numerous species of aquatic plants and animals from the lower plains.

The effect of the Atlantic tides at the mouth of the Amazon reaches its highest level with the phenomenon called Pororoca which means “great noise”. This term is used to denote the penetration of Atlantic waters into the Amazon river bed during the high water season. The freshwater of the Amazon River causes the sea water to break, forming waves over them, which translates into a strong opposition between the two, which is the cause of the crash and the name of the phenomenon.

The Amazon area is still largely unexplored where you can find many native species, both flora and fauna. Its native populations have known how to live and live in this natural environment, and to extract from Mother Nature a great wealth of products and essences that today are being studied and discovered their great healthy properties and good for health and natural care.

The Star Polyphenolic Compound of Olive Oil: HYDROXYTYROSOL

Hydroxytyrosol: extensively related to antioxidant capacities, antievenjecimiento, antiiflamatoria and prevention of cardiovascular diseases.


The consumption of olive oil is very characteristic of the Mediterranean culture and is an indispensable element in its culinary culture. Natural properties

Polyphenols are a heterogeneous group of molecules that share certain characteristics in their chemical structure, including benzene rings.

On the properties and mechanisms of hydroxytyrosol in human health there are many publications, in vitro and in vivo, which are added to the ability to provide stability to the oil against oxidation.

Its high antioxidant capacity in the prevention of various diseases, as demonstrated in numerous studies, is due to its great ability to neutralize free radicals, since these are the precursors of many health problems.

The main properties attributed to it are:


Prevention of cardiovascular diseases (CVD).

Hydroxytyrosol has been shown to be effective as an antioxidant and antithrombotic agent in in vitro and in vivo studies. It possesses cardioprotective capacity because it inhibits the oxidation of LDL (or cholesterol, or “bad”), prior to atherosclerosis. It also inhibits platelet aggregation that occurs in thrombosis.


It has a significant anti-inflammatory effect since it inhibits the production of pro-inflammatory compounds by human leukocytes such as leukotrienes.


It has a high antioxidant capacity that destroys free radicals and inhibits their chain reactions (scavengers). The excess of free radicals creates a favorable balance of oxidants against antioxidants, which implies the appearance of oxidative stress and cellular damage. Hydroxytyrosol plays an important role in delaying the aging processes caused by free radicals, thus blocking the appearance of external signs such as wrinkles, flaccidity and stains.

Anti-cancer activity.

It prevents the proliferation of cancer cells, especially breast and colon cancers.

Protection against UV radiation.

Hydroxytyrosol prevents damage to melanoma cells when exposed to harmful UV radiation.
